The Protected Geographical Indication of Capón de Vilalba applies to the meat of male Gallus domesticus, which are castrated through surgery before reaching sexual maturity, raised outdoors in the climatic conditions of the area. These are semi-heavy and slow-growing breeds with reddish-brown plumage.
The capons are slaughtered at 150 days, after a rearing and fattening period of about 77 days following castration. The geographical area for the rearing, slaughter, and processing of this animal under the Protected Geographical Indication is limited to the municipalities of Muras, Xermade, Vilalba, Abadín, A Pastoriza, Guitiriz, Begonte, Cospeito, and Castro de Rei.
