Carballiño is the most recently populated entity in the region. It developed around the fair created by the Oseira friars in the first third of the 17th century. It is a tourist and spa town, located at a crossroads in the northwest of the province of Ourense. It has two spas: Gran Balneario de O Carballiño, created in 1900, and Balneario Caldas de Partovia, completely renovated in 2017. The most characteristic monument is the Templo de Veracruz, the posthumous work of Antonio Palacios. Also noteworthy is the Municipal Park, with nearly 500,000 m2 of green, wooded, and river walkways. Carballiño is known for being the birthplace of Galicia’s pulpeiras and pulpeiros, making pulpo a feira the most characteristic dish of its cuisine, which can be enjoyed in restaurants or at fairs held on the 16th and 31st of each month.
