The art of cooking and eating well is associated with the entire Minho and Guimarães region, with traditional recipes that have been passed down from generation to generation.
Soups are brothy and filled with seasonal vegetables and legumes. A good example is turnip soup, bean and cabbage soup or “caldo verde”.
Bread finds its most traditional form in corn bread and starters include pig’s ear, roasted chorizo, cod fritters, “puñeta de bacalao”, chicken gizzards, octopus in green sauce, among many others.
Main dishes include “rojões à Minhota com patatas de sarrabulho”, “arroz de pica-no-chão”, “bucho recheado”, roast lamb, “bacalao racheado”, cod with broa, “polvo à Lagareiro”, among others.
As for desserts, the artisanal convent sweets stand out: the “Torta de Guimarães” and the “Toucinho-do-Céu”, which can be enjoyed in the city center and the traditional sweets during the Christmas season.
- The vegetarian restaurant “Cor de Tangerina” even promotes workshops and classes on vegetarian cooking and sustainable living.
Signature cuisine
Guimarães has several signature cuisine restaurants and also vegetarian/vegan restaurants, where the vegetables are always fresh and in order to reproduce some traditional gastronomic dishes.
Among the signature restaurants, we highlight, among others, the Michelin Star-awarded restaurant – “A Cozinha, located in the heart of the World Heritage Historic Centre. Here, chef António Loureiro proposes a cuisine full of sensitivity and balance, with modern forms, but with a solid traditional base, with great respect for fresh and local products.
