Codfish a la Viana was the dish selected by the town’s restaurants as the “iconic dish” of Viana do Castelo, whose flavours identify the city and its people. In pure, fiery olive oil, a slice of codfish, muscular and accustomed to the rigours of the northern seas, nestles with some sizable potatoes. Already arranged on the white porcelain, the three elements welcome the freshness of a Portuguese cabbage, shiny and moist, and a plate of onion that resembles a magical ingredient. To complete the set, a slice of cornbread, dark, wise, essential.
