«Petinga à Moda das Caxinas» (Petinga in the Style of Caxinas) is a stew of small sardines (petinga) with potatoes accompanied by wheat flour that uses a variety of ingredients: sliced ​​onions, chopped garlic, strips of peppers, chopped parsley, bay leaves and tomato paste, together with sliced ​​potatoes and the small sardine combined with the art and dedication of the people of Caxinas. The seasoning is based on salt, mature wine and olive oil. The traditional wheat flour is made from the juice of the sardine, which gives it an exceptional flavour.
