Botillo is a traditional sausage from Bragança and is a good example of making the most of the pig, wrapped in the bladder or stomach, with a humble filling of small bones from the spine and ribs with some meat. It is customary to eat this artisanal sausage accompanied by dried bean shells, locally known as casulas. The Botillo and Casulas Festival takes place the weekend before Carnival, and it is possible to purchase this delicacy, as well as all the sausages and vegetables from the Trás-os-Montes region, directly from the producers in a space set up in Praza Camões.
