Very tasty and tender meat, with a characteristic flavor, due to the agroecological conditions of the Cold Land of Trás-os-Montes, coming from animals of the Churra Galega Bragançana breed. It can only have this designation when it is slaughtered between three and four months of age. Its meat is pink, soft, and very tender, resulting from the fact that it is only fed with mother’s milk. To better appreciate this meat, it is advisable to eat it grilled. It can be cooked as a stew, braised in a pot, and roasted in the oven. It is, along with the kid goat, an emblem of culinary sharing during Holy Week.
