Common throughout the cold zone of the Bragança district, it is an uncommon meat, very tasty and succulent, with a firm and slightly moist consistency, obtained from Mirandesa breed animals raised in their place of origin. The color of the meat varies from pink to light red. In the market, it appears as veal and young beef. Its prestige, due to the quality of its meat, has earned it a “national” dish, the famous Posta Mirandesa. Besides the Posta, it is mandatory to try the Rodeão, also grilled, with only salt as a seasoning. Many other recipes can also be found, and attention should always be paid to the designation of “Carne Mirandesa”. Among others, it is easy to find in steaks, some stews, and enriching the famous “Cozido à Transmontana”.
